Phat Thai

Phat Thai or Pad Thai ( Thai : ผัด ไทย ) is a traditional noodle dish in Thai cuisine . It mainly consists of flat rice noodles ( Kuai Tiau , ก๋วยเตี๋ยว ), plus whisked eggs, fish sauce ( Nam Pla , น้ำปลา ), tamarind paste , chopped cloves of garlic, chili powder , bean sprouts , small dried crabs , tofu and optionally meat or seafood. The dish is garnished with crushed peanuts and coriander leaves , lime , spring onions , and sometimes with a piece of banana blossom . In addition, you can add different spices (chilli powder, pickled chilli pieces, fish sauce and sugar) that are in small bowls on each table, depending on your taste.

Prime Minister Luang Phibul Songkhram declared Phat Thai a national dish during World War II in order to reduce rice consumption at a time when Thailand was facing a budget crisis . Broken rice grains can also be used to make rice flour for flat rice noodles.
