Pimentón de la Vera is a protected designation of origin for a spice powder produced in Extremadura in Spain .

Manufacturing

Peppers from the La Vera region in the north of Cáceres at the foot of the Sierra de Gredos are repackaged several times on dry soil for about 1 week and smoked over oak smoke . After drying, the smoked pods are ground to a fine red powder in grinders without the kernels and stems. The grinding process is repeated up to five times in order to achieve the desired degree of fineness. The finished paprika powder is then packed in tin cans to preserve the aroma. Each box has a seal that the Origin Denomination of Origin carries paprika de la Vera.

There are two varieties that differ in terms of heat and aroma: mild ( dulce ) and hot ( picante ). Medium hot ( agridulce ) is made from a mixture of the two varieties.

use

Pimentón de la Vera is an important ingredient in Spanish chorizo . In Extremadura, it is often used as a spice and natural preservative in house slaughter . Vegetarian dishes are given a smoky aroma with pimentón. The spice is also suitable for fish dishes.
