Poolish

Poolish is a long , soft pre-dough , consisting of water and flour in equal parts by weight. This dough therefore needs little yeast to rise (1% fresh yeast based on the amount of flour). Salt is not added to this pre-dough. Typical for a poolish is a walking time of at least six hours ("long dough preparation").

The name Poolish is believed to refer to Polish bakers who introduced this type of pre-dough to France.
