Riñones (dish)
Riñones ( kidney ) are a traditional Spanish meat dish, which in its basic form consists of thinly sliced pork or veal kidneys, onions, chopped garlic, bay leaf, dry white wine or sherry (fino), olive oil, salt and pepper.
All over Spain - especially in Andalusia - there is a large number of regionally very different riñones recipes.
Riñones are often served hot as a tapa in a traditional clay bowl with baguette slices.
