Rigatoni

Raw rigatoni

Rigatoni are tubular pasta of various lengths and diameters from Italy. They are larger than penne , and sometimes slightly curved, but not as strong as macaroni . Rigatoni have longitudinal grooves, sometimes in a spiral shape, and, unlike penne, are not cut at an angle, but at right angles to the direction of the tube.

Boiled rigatoni

The word rigatoni comes from the Italian word rigato , which means striped . Rigatoni is the preferred form of pasta in southern Italy and Sicily . The eponymous grooves ensure that the sauce and grated cheese stick better than to smooth noodles.
