In the Italian DOC regulation, the addition Riserva describes a wine that has undergone a longer aging than the same wine without the addition. Usually, specifications are also made for storage (e.g. a certain time in a wooden barrel, then storage on the bottle). The exact provisions differ significantly from area to area.

Regulations in the DOCG

Regulations regarding vinification

In addition to the yield restriction, the yield of the grapes is also regulated. A yield of 70% applies to both quality levels, ie with a yield of 8 t / ha, the maximum yield may not exceed 56 hl / ha. After the prescribed aging (see there), the yield may still be 68%, or 54.4 hl / ha. Since these are maximum yields, they are met by the wines with additional geographical designation anyway. If these values ​​are exceeded, but not more than 75%, the wine may not be sold as Barolo DOCG and must therefore be classified in the corresponding DOC. No classification may be used above 75% yield.
