Raw cocoa

As raw cocoa is generally referred raw cocoa beans , the seeds of the fruit of the cocoa tree . As a commodity, they are usually fermented . Other common processing methods are treatment with steam and subsequent drying for easier separation of the kernels from shells, membranes and germs, as well as for debacterization. It is also common to roast cocoa beans, which are then referred to as raw cocoa.
