Rosolli is a traditional salad that is eaten at Christmas in Finland .

Rosolli consists of boiled and diced potatoes, carrots, beetroot pieces and pickles. Hard-boiled eggs, onions and apples are also ingredients. Pickled herring is a common ingredient in some areas of Finland . The salad is often eaten with salty whipped cream that has been tinted slightly pink with the help of beetroot juice.

The word Rosolli is derived from the Russian word rassol ( brine ) and originally meant salty or preserved.
