Pantelleria-style salad

Insalata pantesca

The Pantelleria-style salad (in Italian:  insalata pantesca ) is a typical dish on the island of Pantelleria .

It is a salad made from potatoes, tomatoes and red onions, seasoned with pitted olives, pantelleria capers, oregano and olive oil. The salad is usually accompanied by mackerel in oil, but also with cream cheese or pieces of boiled eggs.
