Sarde a beccafico are filled sardines and are one of the typical fish dishes of Sicilian cuisine .

Fresh sardines are cleaned, gutted and opened like a book. The basic ingredient for the filling is crushed durum wheat bread. It is made into a farce with a little olive oil , onions, garlic, parsley or mint, pine nuts and currants and can be refined with Marsala . The sardines are coated with it and then folded up or rolled up again. Then they are baked in the oven or turned in flour and egg yolk and fried until golden.

The Sarde a beccafico are served as a main course or cold as an antipasti . The name comes from a bird, the Beccafico (German garden warbler ), which eats around figs. In the same way, the filled sardines tempt you to overeat them.
