Scherzel (meat)

Scherzel is an Austrian name for certain pieces of beef . A distinction is made between the white Scherzel (rearmost part), the trimmed or black Scherzel (below the tail piece ) , Hüferscherzel (next to Beiried ) and Beinscherzel (in the upper part of the white Scherzel).

In addition, there is also the shoulder saddle in the shoulder area . It is often used for the dish of plate meat .
