Prepared meat platter with meat, blood and liver sausage, sauerkraut and mustard

A slaughter plate (also slaughter plate , slaughter bowl ) is a meat dish that usually consists of kettle meat and fresh blood and liver sausage .

Side dishes are often sauerkraut and bread or potatoes . Other ingredients may fresh roasting and Mettwurst be and the raw, spicy sausage filling. Traditionally, the slaughter plate was only prepared on slaughter days - before the invention of cooling technology, blood and sensitive offal such as liver and slaughter-warm meat had to be processed immediately.
