Shchi
Shchi ( Russian щи ) is a cabbage soup that is very popular in Eastern Europe and especially in Russia .
The composition varies from region to region, but the main ingredient is always sauerkraut or white cabbage in meat broth and sometimes also meat. Before serving, it is tied with sour cream .
As with many Eastern European soup dishes, the long cooking time on low heat is characteristic of the preparation. In Russia soup used to be put in the oven for many hours to finish cooking. Like other Eastern European soups, shchi has a sour taste, either from the sauerkraut or from the addition of brine or sour cream.
