Pork fat

As lard is called animal fat consisting of the bodies of, domestic swine is obtained.

The fats can be used in any way, e.g. B. be obtained by melting , pressing or extraction with solvents . The most common types of extraction are wet melting (using steam or low temperatures) and dry melting . In meat and sausage production , pork fat is the fat that has been freed from water and protein. It is obtained from the pig's fatty tissue by heating, pressing or centrifuging. Of economic importance is boiler fat, which escapes when parts of the body containing fatty tissue are cooked and is filled separately.

Pork fat is differentiated from pork bacon , lard stearin and lard oil .
