A shichirin ( Japanese 七 輪 , literally about "seven wheels") describes a kitchen utensil from the Japanese kitchen. It is a small charcoal grill that has been in use in several variants for a long time. The hibachi partially overlaps with the shichirin, but a slightly different device is meant here.

As early as the Edo period , the Shichirin was described as a kitchen utensil; it was used by the samurai , other nobles and higher-ranking citizens. Even older models were used in the early days, but the devices still used today are largely similar to those from the Edo period. After spreading to all strata of the people, this small stove was used on many occasions, especially when used outdoors at popular festivals ( Matsuri ) in the cold season. The shichirin is also used during Japanese tea ceremonies.

A shichirin ( also called kanteki in the Kansai region ) is a small, compact stove that can be moved easily and is fired with charcoal. Traditionally, binchōtan , a charcoal from Japanese oak ( ubame ), was used for this. This should burn cleanly, spread little odor and keep the grilled food juicy due to the lower cooking temperature. In the Shichirin , the cooking process can be entertained for up to 4 hours with a small amount of fuel. Especially when Yakiniku is Shichirin an essential Garinstrument.

Older Shichirin were mostly made of ceramic , but today they are preferably made of diatomite or metal. There are models with a double inner and outer ceramic layer. The shape is either cylindrical, rectangular or square, the size can also vary. Depending on the desired use, the ovens are used in different designs.

Differentiation from the hibachi

Nowadays, shichirin and hibachi are often used equally, especially in western language . What is meant here is a small grill oven for barbecue , which is also known as preparation in the hibachi style . The Hibachi in the true sense of the word is a small heating oven, mostly made of porcelain, which was not normally used to cook the food, but rather to heat the living space. The confusion probably arose during the market launch in North America, allegedly because Hibachi was easier to pronounce there. In some parts of the USA , a Japanese steakhouse is also referred to as a hibachi .
