A wine waiter ( French 'sommelier' , female form: sommelier ( wine waiter )) either works in a restaurant and advises the guests and the owner about the wine range of the house or he is an adviser in the wine trade. In the restaurant, he recommends the right wines for their dishes. He is also responsible for the construction, ordering, storage and stock of the wine range and decides when which wine can be sold after maturation . In restaurants with an extensive and high-quality wine cellar , the sommelier is responsible for maintaining a high stock value of the stored wines.
