Spanish vanilla cake

The Spanish vanilla cake is a baked cake made of a sand mass with a vanilla-almond flavor, recognizable by the baked-in chocolate chips. The term Spanish vanilla cake is published by Europa-Lehrmittel as a technical term for the technology of baked goods production , the preparation of the cake is taught in the confectioner and baker training.

By using marzipan raw mixture for the sand mixture, the almond taste and a light cake crumb is achieved. The cake is apricotized after baking and completely covered with cocoa-based couverture or fondant , the cake can be decorated with rosettes made of cream or chopped pistachios. The pastry chef's school in Stuttgart has developed a variant where the chocolate is placed in the dough in the form of two rings instead of pieces.
