Tazcalate (also Tascalate or Taxcalate) is a Mexican national drink from the Chiapas highlands . The origins go back to the Mayan culture in the 9th century AD.

Tazcalate is a powdered drink made from corn and cocoa . The corn is dried, peeled, baked in the oven over an open fire and ground to fine flour. The cocoa beans are also dried, baked and then peeled and ground. In addition to ground cinnamon sticks , fine seeds of the achiote bush, the annatto , are also added. The whole thing is mixed well and then sun-dried for a while. When mixing the powder with the liquid, a certain amount of sugar is added depending on the taste .

Way of drinking

In the Mayan culture, tazcalate was the drink of the gods next to cocoa . It was drunk for ceremonial events and sacred rites. It was reserved for the class of priests and nobles.

Today tazcalate is drunk especially in the highlands of Chiapas and in neighboring states. The powder is optionally mixed with water and ice cubes or with hot milk and drunk from cups with a straw .
