Teerdisch (or Teerdich ) is a dish from the region in and around the city of Trier . It consists mainly of mashed potatoes and sauerkraut , which can be supplemented with various sausage or meat products.

etymology

The word Teerdisch developed from the Latin word “tyrium” for “substance”. The Latin word was used as a name for the nutritious food.

preparation

There are a number of ways to prepare it. Essentially, however, the dish always consists of a spicy preparation of sauerkraut and a mashed potato, both of which are prepared separately and then mixed together at the end. The sauerkraut can be steamed in fat (rendered bacon) or wine with spices (bay leaves, juniper berries), the mashed potatoes are seasoned with salt, pepper and nutmeg, for example. As an addition, various cooked or fried sausages are often served (blood and liver sausage, bratwurst, Kasseler, Mettwurst).
