Teifi (cheese)
Teifi is a cheese from Wales . It is made from cow's milk and has a fat content of around 45%. It is an unpasteurized hard cheese similar to Gouda and has a sunny yellow inside. There are different types of Teifi depending on the maturation period. The young Teifi has a fruity aroma, the older one becomes hard and crumbly. It takes 2–9 months to mature. Sometimes nettles or cumin are added or it is smoked . It was invented in 1992 by John and Patrice Savage-Ontswedder.
