Topinky

Topinky ['tɔpɪŋkɪ] ( singular : Topinka ) are a Czech snack made from toasted and seasoned bread.

Similar to the Italian form of bruschetta , local ingredients are used to prepare topinky - mostly stale brown bread. The bread slices, traditionally fried in lard , are rubbed with garlic on both sides. If you do without animal ingredients, frying in vegetable fat is also possible.

Topinky can be consumed without further refinements. In some parts of the country they are coated with fried foie gras and z. Partly covered with alcoholic plum jam. It is also common to top the toasted bread slices with the Czech blue cheese Niva and let the cheese melt on the bread in an oven. They are usually eaten as a side dish with beef steak tartare . In the Czech gastronomy, topinky are offered as a snack, starter or dinner. Occasionally, the toasted bread slices are also served with soups.

Another variation is the prior soaking of the bread slices in whisked and seasoned egg, similar to the preparation of the " Poor Knights ".
