Turducken

Turducken ( English suitcase word from turkey, duck, chicken , "turkey", "duck", "chicken") is a traditional, lavish holiday roast. This one probably originally came from the American Cajun cuisine and is now popular across the United States . It consists of three types of poultry  - turkey, duck and young chicken - which are boned but left whole and filled with other ingredients according to their size, such as a strongly seasoned cornbread mixture and sausage meat . The prepared meat is slowly fried or grilled in the oven. Turducken with bacon is called turbo duck. The English counterpart gooducken is prepared with goose instead of turkey.

Since the preparation takes a long time and the boning requires practice, the dish is rarely prepared at home these days. Comparable, sometimes much more elaborate dishes made from whole animals nested in one another have been handed down in European court cuisine since the Middle Ages.

Jeffrey Steingarten reports on the history and preparation of a turducken in one of his essays.
