Ucha ( Russian уха́) is a clear Russian fish soup .

The soup can contain fish and potatoes, beets , onions, leeks , salt, dill , parsley, and bay leaves . There are numerous recipes with varying ingredients under the name Ucha.

In Russia a bucket is filled with water and the soup is boiled over an open fire with the fresh catch. First, the ingredients with a long cooking time are placed in the cooking vessel over the flame, then the fish and finally the herbs.
