Waldviertler (sausage)
The Waldviertel is a heavily smoked sausage , made up of meat composed and a fixed proportion of meat. It is available in a wreath or matched as a sausage, stuffed in a thick skin.
Usually cooked with mustard and horseradish, it is part of the standard offer at Austrian sausage stands .
It was named after the Lower Austrian region of Waldviertel , known in Austria for its rustic, hearty cuisine .
