Zuppa Romana

The Zuppa Romana is a variation of the Italian dessert zuppa inglese alla romana . It was conceived as a cake with a rectangular shape, tapering towards the top so that each slice served has a trapezoidal appearance. Consists of three layers of sponge cake, soaked in the juice of pickled Amarena cherries , mixed with rum. The filling consists of the Amarena cherries, covered with a vanilla confectionery cream. The whole thing is covered with a thick layer of whipped cream and garnished with candied cherries.

history

The Zuppa Romana was first served in 1954 in Café Roma on Maximilianstrasse in Munich. The café, which has now been closed, was a trendy café for the Munich crowd. That is why the cake became famous through reports in the gossip columns of the relevant newspapers. In response to requests from holidaymakers on the Adriatic coast for the Italian-sounding cake, this cake was also offered by local restaurants, but made in the typical Italian style with candied fruit and a baked egg-white cap. One of these Italian recipes can even be found in a German cookbook. Except in tourist centers, this cake is unknown in Italy. The Zuppa Romana is now offered in some cafés and restaurants in Germany, especially in the Munich region, but rarely in its original form, but as a round cake with various variations.
