'Nduja

'Nduja is a very spicy , piquant, soft, Italian raw sausage . It was originally made in the southern Calabrian town of Spilinga and the surrounding area. Nowadays the nduja is widespread throughout Calabria . The word "'Nduja" comes from the French Andouille , a French type of sausage.

'Nduja can be used cold as a spread or to refine sauces. To develop its full taste, it is heated and served with toasted white bread. On the dining table it can be kept warm with a scalda 'nduja (similar to a fragrance lamp ).

Manufacturing

The 'Nduja mix consists of pork fat, pork, salt and chili . This is filled into a pig's intestine. After the smoking process , the sausage matures for several months. 'Nduja is very spicy.
