Oyster sauce (dish)

Oyster sauce ( Sauce aux huitres ) is a light sauce of classic French cuisine that is served with fish and game poultry .

To prepare, fresh oysters are briefly boiled in white wine and then removed, the wine is mixed with the liquid from the oyster shells and the basic white sauce , the sauce is boiled through, bound with cream and egg yolk and seasoned with lemon juice and a little cayenne pepper, and the oysters are added again.
