Autolysis

When autolysis ( Greek αυτόλυσις , self-dissolution ' ) refers to the self-dissolution of dead cells of the body by enzymes that are already present in the tissue, without the involvement of bacteria or other living organisms. Cell death can occur through programmed cell death or necrosis . The self-digestion is done by lysosomal enzymes such as cathepsins and other peptidases . Autolysis is one of the first processes of decomposition after death . It takes place in a controlled manner in certain fermentation processes , for example for the production of millennial eggs .
