Buffalo cheese

Buffalo cheese is a cheese made from the milk of buffalo (usually from water buffalo milk). Due to the special fat content (about twice as high as cow's milk ) and the different mineral composition, buffalo cheese differs in taste and consistency from comparable cheese made from cow's milk. In India , for example, the cheese " Panir " is made from buffalo milk, in the Middle East pickled buffalo cheese is widespread. The best-known representative of the buffalo cheese is the Italian mozzarella . A new development is a hard cheese called " Buffalo " which has been on the market in the UK since 1996 and is very popular. In Bulgaria the also is Germany sold buffalo Kaschkaval ( Bulgarian кашкавал produced).
