Panir

Panir ( Persian : پنیر, Hindi : पनीर, English: Paneer) is an Indian cream cheese made from cow's milk with a crumbly to firm consistency. It is used, for example, as an insert in curries .

use

A popular dish from North India is z. B. Palak Panir , a spinach- based curry with diced panir. The cream cheese can also be fried in a batter made of chickpea flour and served as a snack (Panir Pakoda) or otherwise processed. Panir is also a main ingredient in some Indian desserts such as roshogulla . As a long-life dairy product, it is an important source of animal protein.

Manufacturing

Milk is boiled and curdled, for example by adding vinegar or lemon juice . The curdled components of the milk are separated from the whey with a fine cloth , rinsed with cold water and pressed.
