Baking meal

Back shot is made of wheat or rye produced shot and is used in bakery for the production of shot breads.

Baked meal (in contrast to whole grain meal) is crushed grain without a seedling . In the case of baking meal, the seedlings are first removed from the grains in the mill . Only then are the grains (without the seedling, but with the shell parts) crushed.

Baked meal contains many minerals , vitamins , essential fatty acids and fiber .

By grinding the grain into baking meal without a seedling, its shelf life increases compared to whole grain meal, since baking meal contains almost no components of the seedling. Components of the seedling can spoil comparatively quickly due to the increased oil content - they become rancid.

The high percentage of minerals is shown in the flour type designation or type according to DIN 10355 (see also flour type ): Wheat baked meal has type 1700 ; Type 1800 rye baked meal.
