The baking process is a method for the production of amino sulfonic acids , starting from sulfates of various aromatic amines (for example aniline ) by dry heating (baking) at about 180-200  ° C . Aniline sulfate is thus converted into sulfanilic acid via sulfamic acid as an intermediate . The baking process thus allows the sulfonation of aromatic amines without prior protection of the amino function. In technology, instead of dry heating of the sulfates, the reaction mixture is often heated in high-boiling, inert solvents and the water formed is removed by distillation .
