Bierock is a filled dumpling pocket . The pastry is common among the Volga Germans in the USA and Argentina . It was brought to the United States by German-Russian Mennonite immigrants in the 1870s. Other spellings are bieroch , beerock , berrock , bierox , beerrock and kraut bierock in the USA and pirok or kraut pirok in Argentina.

Bierock is stuffed with boiled and seasoned ground beef, shredded cabbage, and onions and baked in the oven until the batter is golden brown. Some varieties contain grated carrots. A variant of Bierock in Nebraska is called Runza , in North Dakota the name is Fleischkuekle .

Bierocks are similar to both the pierogi of Russian cuisine and Börek of Turkish cuisine. In Argentina, the Fiesta del Pirok (Bierock Festival) takes place in Crespo in the Entre Ríos province every July .
