Bitterballen (plural; singular: bitterbal ) are a popular specialty in the Netherlands , Flanders , Suriname and Indonesia . These are breaded meat croquettes , traditionally filled with a ragout of beef or veal mass and deep-fried , with a diameter of around three centimeters. Occasionally, a mixture of chicken or mushrooms is used for the filling. Coarse breadcrumbs are usually used as the breadcrumbs . When consumed, they should be crispy on the outside and hot on the inside. Mustard is usually served with it.

The meatballs got their name because they were originally eaten with a bitters , Dutch bittertje .

In the first half of the 20th century, bitterballen was considered typical home cooking, but today it is usually served as a small snack with an alcoholic drink outside the home. Ordering bitter garnish , which includes other small fried snacks in addition to bitter balls , is popular in restaurants and beer bars .
