Blue bacon

Blue bacon is a variety of kohlrabi ( Brassica oleracea var. Gongylodes ), more precisely a variety of cabbage that was first marketed in Germany in 1925 and is therefore no longer protected by the German Federal Office of Varieties . It is characterized by a blue-red shell and very large sprout tubers. It is suitable for outdoor cultivation, but does not tolerate night frosts and can therefore only be sown from the end of March, beginning of April and into June. The harvest time is accordingly late from July to October. Blue bacon can be stored for several months, is suitable for freeze preservation and is tender and soft as butter when consumed.
