Bleu de Laqueuille

The Bleu de Laqueuille is a French blue cheese made from pasteurized cow's milk . It was in 1850 in the village of Laqueuille in the Auvergne produced for the first time. Mold was used that had formed on rye bread .

The cheese wheels have an unusually large diameter of 49 centimeters. Their height, however, is only 9.5 centimeters. The fat content in the dry matter is 45%. Although the cheese is one of the so-called Industriel cheese types, it is only made in summer and autumn. It takes about three months to mature.

A sweet white wine goes well with the cheese.
