The dummy baking is a technique for baking of a dough base or a pastry case to be filled subsequently. The edge should be able to open, but the bottom should remain flat. Therefore, the dough base is pierced several times with a fork, covered with parchment paper or aluminum foil and weighted down with dried peas, beans, chickpeas , cherry stones or the like. This “blind filling”, which is also supposed to stabilize the edge of the dough, is replaced by the actual filling after baking.
