Boulette d'Avesnes and Maroilles

The Boulette d'Avesnes is a French cheese made from raw or pasteurized cow's milk . The starting material is either buttermilk or unripened pieces of Maroilles cheese in the so-called fromage-blanc stage.

The cheese is seasoned with spices such as parsley , pepper , tarragon and cloves, shaped by hand and colored with annatto , a natural red coloring agent. It then matures for two to three months. Fermier producers in particular of this type of cheese regularly wash their products in beer during this time.

Pieces put on the market weigh between 180 and 250 grams. The fat content is 45% in the dry matter.
