Bresaola ([ bre'zaola ]) (more precisely Bresaola della Valtellina ) is the protected geographical indication (PGI; Italian IGP) for an air-dried beef ham from Italy. For this ham pieces are taken from the leg. It has a milder taste and is slightly more tender than its Swiss counterpart Bündnerfleisch .

Bresaola in northern Italy is prepared Veltlin (Valtellina) , 1512-1798 a subjects state of the free state of the three frets . They also introduced the production process for Bündnerfleisch in the region.

In 2006 almost 11,000 tons of Bresaola IGP were produced.

With Carpaccio di Bresaola , the thinly cut slices are poured with a mixture of olive oil, lemon juice and pepper and decorated with scaglie di parmigiano (wafer-thin slices of Parmesan or other hard cheese) and rocket .
