Breuil (cheese)

The Breuil , in the Basque language also Cenberona called, is a French whey cheese , which from the Basque Country originates. It is made from the whey of sheep's milk.

The cheese is very light in color and has a very smooth consistency. As a specialty of Basque cuisine , this cheese is eaten with strong coffee at breakfast. If it is served as dessert , it is sprinkled with sugar and doused with Armagnac .
