Bull boars

Bull Boars are sausage specialties made in the Daylesford region in the state of Victoria, Australia . They were introduced to the gold rush region of the time by immigrants from Switzerland and northern Italy at the turn of the century .

The raw sausage consists of beef (bull) and pork (boar) as well as an unusual and typical mixture of spices, red wine and garlic . Today the sausages are cooked for ten minutes or prepared on the barbecue , sometimes they are halved lengthways. Originally, however, the sausages were dried like a salami as winter stock .
