Chilaquiles ( tʃilaˈkiles ) is a breakfast dish in Mexican cuisine . In its original version, it is a classic leftover meal that uses other ingredients from the day before.

Etymology and history

The dish is proven for the 19th century. The origin of the name is not clear. Some sources lead the name back to an alleged Nahuatl word chīlāquilitl meaning "soaked in chili"; the Miami Herald columnist Linda Bladholm however, translated the term with "broken Sombreros ".

The foundation of the dish are tortillas broken into manageable pieces . Traditionally, tortillas from the day before are used, which are briefly baked or deep-fried. In the catering industry, they are freshly made, and in the convenience kitchen outside of Mexico they are sometimes replaced by nachos . A warm sauce is placed on the tortilla break, which is based either on tomatoes ( salsa roja , red sauce) or on tomatillos ( salsa verde , green sauce) and contains any other ingredients in addition to chillies, garlic and onions, often including herbs, especially coriander . Cheese is crumbled or grated over the sauce, often queso fresco or queso blanco , which are generic terms for simple, drained cow's milk cheese. Finally, herbs and often a fried egg or shredded chicken are added to the dish, the latter especially when it is not served as breakfast, but z. B. is served as a snack in the evening.

As part of a popular variation of the dish, the tortilla fragments and the sauce are mixed together and fried in a pan with the cheese sprinkled on top.
