Chinese egg noodles

Chinese egg noodles are long noodles with a round cross-section, similar to spaghetti , but differ from most commercially available spaghetti in that they have a stronger taste, which is essentially due to the relatively high egg content. Their surface is generally a bit rougher, which means they can better absorb sauces .

Chinese egg noodles are often offered in transparent film bags and are "folded" inside them so that the noodles rolled out in the saucepan are twice or three times as long as the bag. The cooking time is usually a little shorter than with spaghetti (often between 3 and 5 minutes).
