Corzetti (also: Croxetti ) are a type of pasta from Ligurian cuisine .

Corzetti comes in two forms. Corzetti stampati are round, flat pasta dumplings with an embossed ornament on both sides. They have a diameter of about 4 cm. In addition to industrial production, Corzetti are also made with traditional tools from olive or pear wood. These stamps are used for both punching and embossing the pasta. They often show a regional coat of arms or a mark of the manufacturer on one side . The other side is usually designed in a simpler way, typical are signs such as a cross, a mortar or a sunset.

A special form of the Corzetti are the Corzetti alla polceverasca from the Val Polcevera , in which the thaler is shaped by hand and then turned like an eight .

The pasta dough is made from flour, water and salt, but there are also recipes with egg. Corzetti are prepared the Ligurian way with potatoes, beans and pesto or served with a nut sauce.
