Daifuku

Daifuku ( Japanese 大 福 ) are small rice cakes used in Japanese cuisine that are made from glutinous rice flour. They are a sweet that is eaten as a snack between meals.

The dough can be provided with different flavors such as strawberry or green tea. This Japanese sweet is also available rolled in black or light sesame . Common to the Daifuku is the filling with anko , a paste made from mashed red adzuki beans and sugar.

There is also Yukimi-Daifuku (Japanese 雪見 大 福 ), a product by the Lotte company , in which ice cream is coated with a thin layer of mochi and then eaten with a fork. Thanks to a special technique, the mochi layer remains soft even at low temperatures. Ichigo daifuku (Japanese ち ご 大 福 ) are filled with whole strawberries and anko.
