Demerara sugar (also Demerera sugar ) is the umbrella term for a special type of cane sugar . It consists of large crystals and has a molasses content of around 2 to 3%.

Demerara is usually brown in color, the original color of cane sugar. The designation of origin comes from the then Dutch colony Demerara , where the sugar was initially almost exclusively produced. Today most of the production has moved to Mauritius .

Demerara sugar is often used in baking or to sweeten beverages such as tea or coffee .
