The Dr. Oetker School Cookbook - The Original is a German cookbook published in the Dr. Oetker Verlag appears. It contains traditional as well as modern and international recipes . The cookbook was first published in 1911.

history

The first edition of the school cookbook was written in 1910 by the Bielefeld home economics teacher Emilie Henneking, who summarized her practical experiences from cooking school in a book. It was their aim to pass this knowledge on to future generations so that (especially) women could learn the craft of cooking. The background was the changed family structures at the beginning of the 20th century. At that time, the school cookbook was a practical guide that contained not only the recipes but also tips on housekeeping. Over the past 100 years, the recipes and the layout have been continuously adapted to the changing requirements and current life situations in Germany.

In 1927 the school cookbook appeared in a revised edition for the first time with pictures. At that time it was already the standard work in millions of households as well as in cooking and home economics schools .

Since 1937 new, revised editions have been printed continuously. The 1937 edition took up the diction of National Socialism and advised the German housewife when "putting up the kitchen list":

"Show understanding for the measures taken by the government in the fight for German food freedom and prefer local products."

Although there was still no shortage in 1937 and Germany did not start the war until two years later, the school cookbook made sure to include stews , meat-free dishes , thrift and leftovers. Even goose necks were used: to “filled goose necks”.

In 1950 the company was founded by Dr. Oetker set up his own publishing house of the same name in order to take over the sales of the cookery and baking books independently. Due to the growing spread of electric stoves in Germany, the new edition appeared in two versions in 1952: In addition to the classic edition with the preparation instructions on the gas stove , a special edition for electric stoves was also published. This separation was lifted in 1976 and the school cookbook appeared again in a uniform edition with preparation instructions for both devices.

In view of the "feeding wave" in the post-war period, the editions published from 1960 onwards contain more information about food requirements, especially for adolescents and pregnant or breastfeeding women. In the 80s and 90s, a focus was placed on conscious nutrition, as topics such as obesity and the diseases resulting from it became more important in German society.

In 2011, on the occasion of the 100th anniversary, an anniversary edition and a chronicle for the school cookbook were published, which under the title Eat at least the meat! in the Dr. Oetker Verlag has been published. With over 19 million copies sold, the school cookbook is one of the best-selling cookbooks worldwide. The anniversary edition made it to number 4 in the Stern bestseller list published on September 1, 2011 in the “Non-fiction” category and to number 2 in the Focus bestseller list in the “Advice” category on September 5, 2011. The current edition of the school cookbook appeared on April 9, 2018 and has been extensively revised and expanded. The new edition has 592 pages with 455 recipes and 522 photos.

particularities

The specialty of the school cookbook lies in the detailed and practical writing of the recipes, which the Dr. Oetker test kitchen can be developed and tested under different household conditions.

Since the first edition, the book has been written in the style of a textbook, with which cooking can be learned from the ground up. Over the years, additional content-related aspects such as product knowledge, nutrition and housekeeping have been integrated. Another feature is the up-to-dateness of the content, which is achieved by continuously revising existing recipes and integrating new recipes.

The book begins with an introduction that includes general information (such as portion sizes). The individual recipes are divided into 13 types of food (e.g. meat, game, sauces, egg dishes, etc.). Each chapter on the type of food begins with a two-page guide. The comprehensive chapter and key word index at the end leads directly to the corresponding pages. A recipe is usually presented on a double page. Preparation text, list of ingredients and tips are on the left, and a full-surface, colored recipe motif on the right. For a better understanding, complicated preparation steps are illustrated with numbered step photos.
