Eden Mill is a whiskey - distillery in Guard Bridge , Fife ( Scotland ). The owner is the Scottish Eden Mill St. Andrews Brewers Ltd. Eden Mill is a craft distillery. It is an extension of the craft beer brewery Eden Brewery, which was founded in 2012 .

history

In 1810, William Haig founded the Seggie distillery at its current location. Despite its supra-regional importance, it was closed again in 1860 and converted into a paper mill . Only a few remains of the original buildings remain. Guardbridge Paper Mill continued to be owned by the Haig family, but they sold the mill in 1976. New owners, Curtis Fine Papers, went bankrupt in 2006 and the University of St. Andrews bought the land and buildings from their bankruptcy estate in 2008. The brewery and distillery are located at the rear of the property by the river. The main buildings of the paper mill on the street side have been rebuilt and partially renovated by the university since 2018.

In 2012 Paul Miller founded the Eden Brewery St. Andrews to produce craft beers. In 2014 the production range was expanded to include gin and whiskey and the company was renamed Eden Mill. The name is derived from the adjacent river Eden , on which the industrial site is located.

The water used comes from several nearby sources. The distillery has two fermentation tanks ( wash backs ) (5800 l and 17,400 l) as well as two wash (1000 l) and one spirit still (1000 l) from Portugal. These are copper distilling helmets. The fermentation time is three to four days. The alcohol used is separated from the pre- and post-flow by hand. As with craft beers, diversity is also important. For this purpose, experiments are carried out with different types of wood and malt. First fill and virgin oak barrels are 95% used. This includes mainly small-volume barrels, which enables faster maturation. The master distiller mainly relies on hogsheads (approx. 240 liters) and octaves (approx. 50 liters). The distillery uses three different types of malt: pale ale malt , caramel malt and roasted malt .

In addition to a special edition First Bottling , the Hip Flask Series is also available. The Hip Flask Series experiments with different finishes.

The first bottled bottle of the First Bottling Edition was auctioned on May 7, 2018 and broke the world record as the most expensive first release with proceeds of $ 9,500. The distillery also offers a blended scotch, which is only produced in small quantities. There is also a lot of experimentation in the production of the blend, so that the individual batches differ significantly from one another. Purchased whiskeys are mixed and then stored in different barrel types. Eden Mill states that it was actually an in-house blending exercise designed to demonstrate and develop expertise.

Eden Mill also produces craft beers and gin.

Sightseeing

Sightseeing tours are generally offered. However, production is suspended due to a move to larger premises. For these reasons, a visit is currently not possible. During the renovation work, a small, temporary visitor center was built on the opposite side of the street.
