Emping is a typical Indonesian snack and is often served with krupuk as a side dish. Emping is made from the seeds of Gnetum gnemon and has a slightly bitter taste. Emping is purely vegetarian , while krupuk can usually contain fish, shrimp or crabs.

Manufacturing and preparation

Ripe seeds of Gnetum gnemon , also known as melinjo seeds, are used to make emping. First, the outer, red shell of the seeds is removed. Then the seeds are roasted and the leathery outer integument removed from the white inner endosperm , similar to roasted chestnuts . The roasted endosperm is usually hammered / knocked into thin cookies with a stone and then dried in the air / sun and offered for sale as raw emping on the market. Sometimes several seeds are hammered together to form a larger space. The wafer-thin variety has the best quality.

The raw emping is fried in oil. Then it is salted or caramelized with sugar before serving for snacks. As a side dish, it remains natural.

Aside

Along with nasi goreng , bakso (meatballs in soups) and rambutan , emping is one of the favorite dishes of former US President Barack Obama on his trips to Indonesia.
