The Steirerkas (Steirerkäse) is a low-fat cheese and sour milk cheese from the Austrian state of Styria . A distinction is made between different regional varieties.

The varieties Murtaler and Ennstaler Steirerkäse are registered in the Austrian register of traditional foods and are the leading products of the two culinary regions .

history

The cheese has certainly been produced since the Middle Ages at the latest, and was already a staple food for farmhands and miners in the 17th century . It was a typical farm product for personal use.

Manufacturing

Murtaler Styrian cheese is made from matured curd cheese , which is mixed with salt and milk , seasoned with caraway seeds and pepper and then heated until the mixture melts ( cooked cheese ). It is cut-resistant and is packed in pieces.

The Ennstaler Steirerkäse is made with the same basic ingredients, but not melted: it is a short cheese, is hand-crumbled, kilned ("puffed") and mashed, has a lumpy, crumbly consistency and a marbled appearance, and is packaged in glasses or similar containers.

The Murtaler Steirerkäse forms the basis of the Murtaler Steirerkäsesuppe. The Ennstaler Steirerkäse is used for the Ennstaler Kasnockn .
